One of Portland’s best restaurants
Bolster, Snow & Co. is located at The Francis Hotel in Portland, Maine. This exceptional Portland restaurant serves modern American food prepared with fresh and seasonal ingredients. At the helm is Executive Chef Nicholas Verdisco, previously of the Inn at Pound Ridge by Jean Goerges. Chef Nick prepares his mouth-watering dishes in visually stunning ways and is the creative force behind BSC’s entire menu, which is heavily influenced by his Italian, French and Southwestern culinary background. The menu includes an extensive small plates list for those looking to pass around dishes over drinks and an entrée list that includes fresh approaches to classic dishes. His homemade pastas have become a staple in many local diets and not to be overlooked is Sarah Miller, the genius pastry chef responsible for some of Portland’s best desserts.

Fine Dining in Portland, Maine
A Scottsdale Arizona native, Nicholas Verdisco grew up with a passion for food. Coming from an Italian American family, Nick recalls large Sunday meals, making pasta by hand with his grandmother and arguing about whether he was pouring “sauce” or “gravy” on to his spaghetti.
Although cooking was a passion for Nick, it didn’t become his profession until 2008. He graduated with honors from the Connecticut Culinary Institute and completed his externship at Barcelona Wine Bar. A short time later Nick took a position at The School House at Cannondale under Chef Tim LaBant, where his passion for creating modern American cuisine using fresh, local ingredients was born. He rose through the ranks to become Chef de Cuisine. After five years with Tim LaBant, Nicholas left to go work for acclaimed chef Jean-Georges Vongrichen as an Executive Sous Chef serving upscale American fare at The Inn at Pound Ridge, a restored, rustic-chic 1833 inn.
BOLSTER, SNOW & CO.
'BSC' as it is affectionately referred to by staff and regulars, has developed quite the reputation in Bon Appetit's 2018 Restaurant City of the Year. Since opening its doors on October 3, 2017, BSC has earned a coveted 4-star review by The Portland Press Herald critic Andrew Ross and won several Best of Portland awards voted on by readers of The Portland Phoenix including Best New Restaurant and Best Service. Most impressive, however, is Chef Nick winning the top prize in the Best Chef category – an impressive feat for a newcomer considering the many talented and award-winning chefs at the helm of Portland's popular restaurants.

We love our guests and they love us back
Gem in Portland!
So glad we stayed at the Francis on a recent weekend getaway to Portland. The hotel is charming, the rooms are large, the service was great, and there are wonderful small touches throughout the property. The surrounding area is less touristy than near those hotels in Old Port, but we found that to be a net positive. There are a number of excellent bars and restaurants within walking distance (try Hot Suppa, Bao Bao, and The Bramhall). Would definitely stay here again.
Lovely Boutique Hotel
Accommodations were great - room was comfortable & clean. Staff was helpful & welcoming. The location was good for sightseeing - we were able to walk around Portland from there.
The Francis is a beautiful boutique hotel with friendly and knowledgeable staff. Staff went above and beyond to make sure we were comfortable Rooms are very clean and unique , Bose speaker to use while taking a shower. The Francis is so conveniently located close to the downtown Portland shops and just across from a great bakery and coffee shop... this is a must stay ... we will definitely be back.
Favorite place in Portland
Great place to stay. Staff was wonderful. Clean and new accommodations. We were able to get an early check in and a late checkout via text message. I would recommend getting the Terrace if possible!!!
Super friendly staff!
Our stay was during the covid19 pandemic. The staff was super friendly and due to limited numbers of travelers, we felt like we had the place to ourselves. It feels like a hotel meets bed and breakfast. There is a lot of charm and character and it is cozy. Great beds and wonderful showers.
